Happy Tuesday!
I was feeling a little ambitious today and made a couple of fun little treats! The most fun thing about them is that they each take less than 10 minutes to put together! This first one was inspired by Emily from Love a Latte and her post for “Spectacular No Bake Cookies”. I have made a version of these before, but it’s been while. I’m not sure why, considering how fast and easy they are to make!
The recipe that I normally follow is one that I found, among other fantastic vegan desserts, on a site called Chocolate Covered Katie. Have you guys ever been to her healthy dessert blog before? It’s amazing! You gotta check it out!
The original recipe is called Chocolate Chip Peanut Butter Balls. When I make them, because of my peanut allergy, I use sunflower seed or almond butter. This time I used the sunflower seed butter. I also threw in some flax-seed and unsweetened shredded coconut. I also used brown rice flour in place of the other flours listed in the recipe and they came out perfect! I got about 15 of these little guys out of the recipe and they are addicting!

Apparently, I wasn’t through feeling ambitious and since I still had the unsweetened coconut out, I decided to make another one of Katie’s glorious confections, No Bake Coconut Crack Bars! Seriously, you guys, if you like a Mounds Bar, you will love these! These particular ones aren’t chocolate covered, but I’m sure there would be no harm in drizzling some luscious melted dark chocolate onto these babies! Dang, I wish I had thought of that earlier!
I used maple syrup for my sweetener, but you can also use agave. I’m sure honey would work well too…..if you aren’t a strict vegan.

Last but not least, dinner! Now, I know we are just getting to know one another, but if you read my “ABOUT” page, I told you that I do enjoy cooking, but I CANNOT develop recipes! Whenever I meal plan (UGH!) and cook, you can bet that I’m searching my huge list of sites with so many incredible recipes on them to guide me through a week of delicious, mouth-watering dinners!
This fabulous dish comes from Tracey’s Culinary Adventures. It’s called “Late Night Pasta” and you can get this delicious recipe here. It’s described as a mix between cacio e pepe (pasta with cheese and black pepper) and pasta carbonara.
I did sub a few things to make it a wee bit healthier, though. I used brown rice pasta, Earth Balance vegan butter and Jennie O turkey bacon. This is now officially one of my FAVORITE ways to enjoy pasta! Try it…you will thank me! Actually, you would thank Miss Tracey!
